2014 was a great growing season, and we harvested our Block 7 Syrah on September 29th. Fermentation in open-top fermenters was followed by aging in 100% French oak barrels until January 2016 when the blend was racked from barrel. This extended ageing in French Oak, of which was new, has enhanced the flavors and structure of the wine.

Notes of clove, nutmeg and cinnamon set the stage for our Bridlewood Paso Robles Cabernet Sauvignon. These nuances are complemented by flavors of black currant, blackberry and cassis. We added Petite Sirah to enhance the dark fruit characteristics and structure, resulting in a plush mouthfeel. Round tannins lead to a sweet, smooth finish drizzled with caramel.

Demi-muids are over two and a half times larger than our normal barrel, a barrique, and therefore give less oak to the wine, but still impart great clove, nutmeg and cinnamon spice to complement the fruit. We further enhance this spice compote with texture from 100% malolactic fermentation and lees stirring every 2 weeks for 6 months. Make sure you enjoy this wine with a chicken tagine, complete with its own spice compote.
