A tribute to our acclaimed Whale Rock Vineyard grown on the Westside of Paso Robles. Balena is a delicate, aromatic blend of Falanghina, Grenache Blanc, Chardonnay, and Pinot grigio. Balena displays floral and tropical aromas of sandalwood, orange blossoms, mangos, and grilled pineapple. The fruit is framed with balanced acidity and a refreshing finish to create an elegant wine. Barbera is an Italian varietal grown mostly in Piedmont and the southwest area of Lombardy, where it accounts for of the plantings. Half of our Barbera grapes are planted on a steep south facing slope while the balance is near a seasonal creek running through the vineyard. The combination of hillside stress and rich bottom-land grapes is ideal. This wine is rich in the nose with aromas of fresh picked strawberries, wild raspberries, chai spice, and vanilla. Extended oak aging mingles the fruit aromas with cinnamon oak nuances creating a body balanced with medium tannins. Go Italian and enjoy it with your favorite pasta dishes!

2012 Cabernet Sauvignon Whale Rock
Cab is King! The 2012 Reserve was made from a blend of outstanding vineyards aged for 24 months in French oak barrels. The extended oak ageing adds a muscular finish and dense structure along with gingerbread and vanilla spice aromas. There are rich layers of cherry pie filling, cola, dark chocolate, and ripe strawberry flavors. Our Reserve has broad shoulders with ample polished tannins. This is truly a special treat! Enjoy with rich, hearty entrées or aged cheese. Enjoy now and excellent for cellar aging too.

We planted six acres of Carignane in our organically grown Whale Rock Vineyard on the westside of Paso Robles because we love the deep garnet color, rose petal aroma, and bright raspberry finish. One of the most planted grapes in France, it’s used ex-tensively for blending because of the natural acid balance, intense smokiness, and fresh-picked berry flavors. Our Carignane starts with strawberry-rhubarb and cherry cola aromas, has a full and lush middle, and finishes with a dark chocolate silkiness. This is a food lover’s wine! It pairs great with fairly strong cheeses, hearty entrees, and is a Thanksgiving favorite.

Our Charbono is made with organic grapes from our Whale Rock Vineyard located in the Templeton Gap area of West Paso Robles. Typically one of the last grapes to be harvested, the long hang time allows the flavors to fully mature and create an exceptional wine reminiscent of the great Italian vintages. It displays smoked cherry, violets, and dried cranberry aromas. There are dark, ripe berry flavors followed by a finish with supple tannins. A treat and unique wine for any cellar!

This Whale Rock Chardonnay is a staff favorite! The grapes are farmed organically on the west side of Paso Robles. A portion of the grapes were fermented in new French oak barrels and aged on the lees for a creamy, elegant middle palate. This dry-yet-fruity wine has aromas of ripe peaches, pears, jasmine flowers, and shortbread. As you drink it, you’ll encounter a grilled pineapple sweetness balanced perfectly with a crisp, lengthy finish. Always a treat with rich seafood dishes and creamed soups. Serve slightly chilled.

This wine is rich in every sense. A SIP (Sustainability in Practice) certified blend of cooler Templeton Gap fruit with our warmer Eastside fruit creates a lovely collage of tropical flavors: grilled pineapple, passion fruit, and ripe pear. A portion of the blend was barrel fermented in French oak to create a silky body with weight. A por-tion of Pinot grigio was blended in for balance and a refreshing finish. This wine will complement any seafood dish and really stand out with rich cream sauces on pasta or chicken. Serve only slightly chilled to allow the aromas to fully open up.

This grape originates from France but carries a German name. Gewürztraminer is an outstanding wine found in the Alsace region of France. The area is heavily influenced by Germany in architecture, food, and wine style. These grapes have a beautiful golden hue when ripe and are from our SIP Certified Estate Vineyards. The aromas are floral and exotic: jasmine, rose petals, lychee, and crystalized ginger. The mouthfeel is lush, but also delicate. Delicious with sushi, Thai cuisine, and spicy appetizers or cuisine. Serve chilled.

Merlot is one of the main Bordeaux varietals and grows well in Paso Robles. This brick red Merlot has a full nose of rose petals, dried cherries, and boysenberries framed by dark chocolate and baking spices. The mouth begins with blueberries and strawberries and finishes with medium tannins and moderate vanilla oak. This wine is a great alternative to Cabernet Sauvignon when you are looking for something a tad softer with more elegance. You’ll find this wine is great with any cheese, roasted meats, or vegetable dish.

We invite you to celebrate life with this Blanc de Noir sparkling wine made tradi-tionally from start to finish in the Méthode Champenoise fashion. Secondary fer-mentation in the bottle and 12 month yeast aging results in refined bubbles adding a toasted aged complexity and elegance. The fine mousse brings forth the pear and granny smith apple nose balancing perfectly with a smooth and round mouth feel, finishing crisp with a note of grapefruit. From the pop of the cork, this wine will tantalize your taste buds and leave you wanting more.

Muscat Canelli is truly a grape where the fresh aromas are just as intense and flowery in the wine as in the grapes! As the fermentation takes place, the whole cellar is filled with its beautiful fragrance. If you have time, come by the winery in late September during its fermentation for a memorable treat. You will smell peaches and apricots in the bouquet. Orange Muscat is blended in to add honeycomb and tangerine notes to round out this fruitier, light bodied Moscato. Drink this wine chilled as an aperitif or enjoy its freshness with fruit desserts. Interestingly, Muscat Canelli is a treat with very spicy foods.

Petit Verdot is one of the varieties used in Bordeaux for blending, so it’s no wonder that its also an integral component of our Anniversary and other Reserve blends. It is rich with a mouth-filling, crisp body that’s an excellent match for bold meat dishes. This big wine has a glorious garnet purple color with a perfect balance of acid, tannins, and oak aging. The aroma is of cranberries, smoky cherry, espresso bean, and violets, framed by the French oak aromas of Vanilla-Chai. Drink now with your favorite cut of meat or save it for a special occasion that calls for intensity!

One of our favorite wines! This wine is reminiscent of the Marlborough region of New Zealand, highly aromatic and lush. The Sauvignon Blanc grapes are from our Dos Viñas Vineyard in the foothills facing south towards Paso Robles. A splash of Gewurztraminer is blended in to add weight on the palate and Asian pear aroma. This is a dry-yet-fruity wine with a lemongrass, tangerine, and white peach bouquet. The mouth is crisp, medium bodied, with a lingering finish. Try sautéing scallops in butter with a bit of this wine and garlic. Squeeze a little lemon on top and enjoy with the rest of the chilled bottle.

This Syrah comes from our CCOF Certified Organic Whale Rock Vineyard on the west side of Paso Robles. The cooler west side conditions create a deep ruby color and juicy dark berries, which develop into a full mouth feel. Balanced acidity with ample tannins is the perfect combination for longevity. Bay leaf, black cherry, a touch of earthiness, and peppercorn aromas are paired with a smooth, mocha finish. Drink now and save one for later. Truly a Syrah lovers wine!

Whale Rock Vineyard is a CCOF Certified Organic vineyard in the Templeton Gap that produces some of the best grapes in Paso Robles. This is an awarding treat that explodes with ripe strawberries, framed by cinnamon-spiced plums, and vanilla bean. Barrel aging for 15 months creates a supple, bright, dry-yet-fruity, medium bodied sipper, with a crushed cherry finish. The Spaniards, known for their Tempranillo, would be jealous of this wine’s finesse! Enjoy with Paella or pair with tapas and mixed grilled entrees.

Our 2015 Viognier is a medley of our Estate Grown Stone’s Throw and Dos Vinas Vineyards; both SIP Certified on the eastside of Paso Robles. A long, cold fermentation in stainless steel tanks retained the distinct Viognier floral and fruit characteristics that we love: orange blossom, jasmine, apricot, and ripe pears. This Viognier is lush with a weighted palate and a refreshing, smooth finish. Enjoy this wine with friends and family on warm evenings with your favorite light summer meal!

The 2014 Zinfandel from our Paso Robles Estate fruit is another stunning wine with classic, fresh berry brightness! Flavors of raspberry jam and crushed cherry fill your mouth, with a subtle black pepper spice finish. Fifteen percent of Petite Sirah is married in for structure, tannins, depth, and a deep garnet color. This Zinfandel showcases intense fruit, a medium-to-full body, and a French vanilla finish. 2014 Zinfandel Late Harvest
We have perfected the method for making this wine! Select rows from our CCOF Organic Cobble Creek Vyd were netted to protect the vines from the birds. The grapes were then left to hang for another month after the primary picking to raisin up; this creates grapes of unmatched intensity and sugar. We fortified the fermenting wine with our own distilled zinfandel wine spirits to stop the fermentation and maintain the proper sugar balance. This creates an intense wine full of blueberry, raspberry, coffee, dark chocolate, and spice aromas. Enjoy this after dinner, by itself, or with decadent chocolate desserts.
