The first inch of the neck of the bottle is frozen solid on a bed of dry ice and the crown cap removed. The frozen plug of wine and yeast lees is forcefully ejected and a final dosing of sweetening is instilled. Sugar and the base wine are added to bring the level to 750 ml and to create an elegant Brut style wine.

The color of this wine is ruby red to dark red in the center with brilliant clarity and crisp edges. On the nose, there are notes of cedar and smoke with a touch of cranberry, cherry. It opens with lengthy fruit and violets. It has subdued oak through the mid palate. P lums are backed by rich cassis, a hint of chocolate and a pleasing mouthfeel. Medium tannins provide for a wonderful food wine and tremendous age-ability. The finish mingles leather, subtle oak and soft fruit for a lengthy but not overly dense remainder of the wine.

2015 Chardonnay Vintner’s Select
The barrel aging of this Chardonnay creates an elegant depth to the chardonnay that stainless production does not offer. It is aged in new oak barrels and the lees are stirred for fourth months, every other week. It has opening notes of butter, ripe fruit, honey and almond, with a creamy aroma and a back drop of toasty oak. It has beautifully balanced acidity, making it a perfect pairing for rich seafood dishes and more!
It has a lovely, golden straw color.
The palate entry is of rich, golden honey and toasted almond with ripe fruit in the California, oak driven style and a generous, voluptuous mid palate. There is honey and almond as well as vanilla and toasty oak in the finish with lingering cream and a layered finish.

It should be served well chilled and will accompany lighter fare including salads, goat cheese and seafood….. the Spanish paella is not to be ignored with this wine…. And it is not afraid to “go it alone”…. Just open and consume.

With a light red color and tan edge, the first impression is one of age. Upon inspecting its aroma we realize this wine is of design and in balance. Its nose has brown sugar, sweet cherry, cedar and currant. The alcohol is evident but subdued and not overpowering. In the mouth this wine comes to life with a coating sweetness and currants, raisins, cherries and plenty of spice. Remarkably the finish is medium in length, making room for the fresh pear and dried figs, St Ettiene and Goudda cheeses. It refreshes rather than adds weight to the experience, cleaning the palate in preparation for the next bite.
