Two tons of Picpoul Blanc was harvested under the full-moon and delivered to the winery where it was gravity fed into the press while still cold to preserve freshness. The juice was then slowly transformed to wine at low temperatures to further preserve freshness and delicate aromatics before being racked to Acacia barrels to add roundness to the bright fruit.The wine was bottled April 7. Fresh verbena, pear, and spice complement a wonderfully bright and fresh yet rich mouthfeel.Pairing Suggestion:
