Fire Sign brings together the best aspects of the Vineyard and a “no holds barred” wine making philosophy. Typically low yielding vines are farmed with sustainable agriculture procedures including alternate row tillage, perennial grasses in vine row middles and mulching utilizing mulch produced on site from previous year’s pommace. Fruit is hand harvested, de-stemmed, cold soaked and slowly macerated in small open top fermenters for approximately 20 days. Each individual lot was racked into select new select fine grain French oak and aged for 18-20 months. The barrels are then evaluated and the highest rated barrels are selected for the Fire Sign Cuvee. Flavors of ripe black cherry, blackberry, black currant, toasted vanilla, and anise create a powerful yet elegant representation of the vintage.Pairing Suggestion:
